Happy 4th and a yummy treat !

Hope you all have a happy 4th with your families and friends and that you remember what this holiday represents.
Especially to all those who have or had loved ones serving overseas. Or those who have had to deal with the loss of a loved one.

And to my mom who is alone right now since my dad is also overseas now (but will be home soon….yay!)

We appreciate the sacrifices that are made by those who serve and by those who stay behind to “hold down the fort.”

And for those who fought and, in alot of cases, laid down their lives in the past to make this the free county that I LOVE!!

We keep you all in our prayers and are thankful for the sacrafice!!!

Now on to the grub!

Since summer has come, the warm weather has been making me crave peaches like crazy!

One of my favorite things to make with peaches is a good peach crisp (cobbler is second runner-up!).

But…….I also like to keep things on the healthier side (much to my own dismay since I LOVE sweets), so I searched out and found this great recipe from Cooking Light magazine (minus the peach schnapps OF COURSE).

This one is called a “cobbler” but it’s just pretending (Maybe it has some sort of personality disorder :).

So here are some pics to get your mouth watering too!

Ahhhhhh! Ready to eat….with a wee bit of whipped cream (we were out of vanilla ice cream……healthy ice cream, I mean).

Anywhoo, hope you all enjoy your day!! Eat a little bit of B-B-Que for me since it’s just me and the girls tomorrow (my hubby is a police officer and has to work tomorrow :(

Don’t feel too bad….we’ll go shoot off some fireworks in a nearby city (where fireworks are legal, of course).

Also, here’s another peach recipe that’s great for when guests are visiting. Just whip a big batch of this “Peach French Toast Bake” the night before, and then all you have to do the next a.m. is toss it in the oven!! I usually substitute the eggs for egg beaters to make things easier and a bit lighter.

This is our little family’s traditional “Christmas Morning” breakfast. By the time we are finished opening presents….this is hot out of the oven and hits the spot with a little maple syrup!! But still a great summer food, too!
