Ok, I have a confession to make. I’m not very good at making layer cakes. There. I said it. Yep, they always end up being lopsided, lumpy, and {yes, AND} crummy. So, I’ve been making a lot of cakes lately in an attempt to finally get it right {luckily, no one here has been complaining about all the extra cake}.

This one was actually pretty easy to make and looks really cute {and kind of hides imperfections, which is a bonus}. You can even use chocolate chips instead to add some chocolatey goodness. I’m also gonna show you a few tricks to show you to make frosting a little easier.

Bake your cakes up….I made a 3 layer and used 2 cake mixes.

I just realized that I’ve been using the wrong pan for years and my cakes were always ending up really rounded on top and too cooked on the sides {like the cakes both ate another cake and now have really big bellies}. I got these round aluminum pans recently and they work like a miracle! The cakes bake more evenly and are beautiful! You can get them here, if you’re needing to replace yours too.

Next, whip up some super yummy buttercream {I found an awesome recipe here} Trust me, it’s so yummy you might have to make 2 batches….one to go straight onto the cake, and one to go straight into your mouth!

Here’s another trick for frosting the cake. Before you start, put 3 or 4 thick strips of wax or parchment paper under the edges of the cake to keep the mess off the cake plate. Then, frost that yummy cake like you normally would…and then slowly slide them out carefully. No mess!! If you need, just touch up around the bottom…but you don’t have the frosting mess all over the cake stand. Or maybe it’s just me that makes a super huge mess….?

After the cake is frosted, quickly pat the sprinkles onto the sides before the frosting dries too much.  I just left the top plain….I liked the way that looked against the all that color.

I used 2 whole sprinkles bottles for this {this kind}….but there were a few spots that could have used more if I had gotten 1 more bottle or a larger bottle.

I colored the frosting between the layers to match the pink hearts for a fun surprise for my girls….
